Day 3 of Insanity done!
Now eating a nice, big healthy lunch of 3 scrambled eggs, spinach salad w/roasted red pepper and light dressing, and greek yogurt w/chia seeds. Then a shower and off to work for the evening. Hope all of you have a lovely day!

Yikes! Can’t wait to see some improvements to that.
Just finished day 2: plyometric cardio circuit. Kicked my ass pretty hard but it feels so good! I was already a little sore today so I’m sure I’ll be feeling it tomorrow as well.
Recovering with this spinach, chicken, roasted red pepper, sprinkle of parmesan, and tiny bit of vinaigrette salad.
About to kick back and watch the Olympics now!

I had to switch up the recipe a little bit though. Instead of chia seeds I used flax meal. I also used unsweetened coconut milk in place of the skim and greek yogurt and a packet of sweet and low instead of the honey because I didn’t have any. It was good but it needed something else. Thinking I might add cherries to it next time I make it. I really want to try the pumpkin recipe also!
Overnight oats are so convenient when I have to work 5am shifts. I love not having to worry about getting up and making something to eat, I can just grab it and eat in on my way.
And speaking of work and chia seeds, we finally started carrying them! I’m excited to try them out!!
